I'd love to see a way to edit book covers, by being able to type on them. I have a lot of old books that don't have the title listed on the cover, but I don't want to get rid of that cover (and replace it with one that isn't the same), as it helps me identify the book on my shelf.

Open the image in Preview and use the menu Tools > Annotate > Text to add text on top of your image. (Ctrl-click, or right-click, inside the cover image well and choose 'Show in Finder' to have the program show you the original cover image file in the data folder so you can then open that in Preview.)
