You could have done a find and replace and that would have fixed things but you can just download the apps again and they will do the work for you.

Select all entries and choose 'Edit'. That'll open a multiple edit window where you can blank out whatever fields you want.

The covers will only show up in CDpedia. The transfer works only one way, from iTunes to CDpedia, not the other way around.

DVDpedia isn't set to import data from your iTunes music library. Only CDpedia can do this.

For accessibility, use the AmazonPedia widget. It allows you access to all the Pedias at once without having to the open the programs. Spotlight is also a quick way to search for an entry.
