I cannot seem to find any way via the GUI to modify the types of Media. Is there any way to add MP4 or other types since this is becoming much more popular way to experience content nowadays.

Type the new media into the field, it will auto detect when you add MP4 and make it one of the options for the future. If you would like to remove the options already there or rearrange the order you can manage it under the menu DVDpedia -> Preferences -> Autofill (tab).
